PDO cannellini beans from Val Comino gr. 250

The plants are harvested when the pods are ripe and, given the climatic conditions of the area, aggregated into bundles and dried with natural ventilation; the bundles are then shelled using the old system of manual thrashing and finally waxed and stored in cloth bags. Even today the soil, before planting, is not fertilized, not even with organic fertilizer. Final sorting, before packing, is done manually.All according to the regulations established for the production of "Cannellino DOP di Atina."
